Out of the frying pan and into my belly. (Well first onto a plate, then wrapped in lavash, then in my mouth, and then in my belly)

I made falafel this weekend. Soaked the chickpeas 18 hours before hand, then brought to a boil and simmered for an hour.

Then comes the hard part. I had to mash the chickpeas, by hand. I started off with my potato masher, and that worked for a bit, but the holes were too big, so I eventually switched to my wooden soup spoon. It took a while, then I added a bunch of spices and then flour to help it hold together in the frying pan.

I was actually pleasantly surprised that it turned out pretty good. It was a lot of work, in preparing it, especially mashing the chickpeas by hand, but it was well worth it. So dinner was falafel, wrapped in lavash, with some Parmesan cheese (I didn't have anything else to put on it).
